It’s time to step up your burger game with Chef Kyle’s tasty Grilled Hawaiian BBQ Burgers. By rounding out the plate with his grilled potato wedges and Maui Pineapple Slaw, you’ll have a healthy, Hawaiian-inspired summer dish that’s perfect for your next backyard dinner party.

Grilled Hawaiian BBQ Burgers

Serves 4


You’ll Need

Burgers
  • Farm to Market wheat burger buns, sliced – 4 each
  • Local Good Nature Family Farms ground beef – 18-26oz – made into 4 patties
  • Lettuce – 4 leafs
  • Avocado, de-seeded, sliced – 1
  • Red onion, sliced – 1
  • Smoked Gouda cheese – 4 slices
  • BBQ sauce – 4-8 Tbsp.
  • Crispy fried onions – 1 cup
  • Salt & pepper – to taste
Grilled Potato Wedges
  • Potatoes, halved – 4-6 cups
  • Olive oil – as needed
  • Paprika – 1-2 teasp.
  • Salt & pepper – to taste
  • BBQ dipping sauce – as needed
Maui Pineapple Slaw
  • Pineapple, diced – ½
  • Cabbage, shredded – 4 cups
  • Jalapeño, de-seeded – 1
  • Cilantro, chopped – 1 cup
  • Carrot, shredded – ½ cup
  • Pineapple juice – ½ cup
  • Lime juice, fresh – 1 lime
  • Lime zest, fresh – 1
  • Mayo, reduced calorie – 1 Tbsp.
  • Salt & pepper – to taste
  • White Vinegar – 1-2 Tbsp.
  • Fresh Papaya, de-seeded, skin removed, diced – 1-2 cups
  • Olive oil – 1-2 Tbsp.

Method of Preparation

  1. Grilled Potato Wedges
    In large pot on high, cook potatoes in enough water to cover until tender but not over cooked. Drain water and toss potatoes in oil, paprika, salt & pepper. Reserve on side until ready to grill.
  2. Grilling Time
    Light charcoal grill and use applewood along with charcoal. Allow to heat and get to proper temperature before grilling. Will take about 10-15 minutes.
  3. On charcoal grill, add potatoes & onions to edges of grill and place hamburger patties in center part of grill. Cover grill with lid and leave both top and bottom air vents completely open ensuring top lid is completely closed. This will ensure heat and minimal flame and a good amount of smoke to season food.
  4. Flip burgers, onions, and potatoes and put lid back on.
  5. Once potatoes and onions are golden brown and charred, and burgers are done, remove from grill. Melt cheese on burgers for the last 30 seconds of cooking, if desired.
  6. Can toast hamburger buns at this point.
  7. Pineapple Slaw
    Mix all ingredients in mixing bowl and season to taste. Reserve cold on side.
  8. Plating
    Starting with bun on the bottom, start building with mayo, then lettuce, burgers, grilled onions, avocado, BBQ sauce, crispy onions, and top with bun.
  9. Place burger on plate and place sides of slaw and potatoes with BBQ dipping sauce on plate as well.
  10. Enjoy!

Chef Notes

  1. Can omit cheese.
  2. Can purchase your favorite BBQ sauce but recommend to use dark sweet sauce and not vinegar based sauce.
  3. Make gluten free by omitting bread and using rice cakes and serve 2 pieces open face style.
  4. Hen House carries local ground beef from Good Nature Family Farms.
